Ingredients
For the fig-wrapped burrata
- 6–8 fresh figs, peeled
- 1 burrata (125 g / 4.4 oz)
- Crushed pistachios, for topping
- Olive oil, for drizzling
- Fresh bread, to serve
For the basil-cashew pesto
- A handful of fresh basil
- 30 g / 1 oz cashews
- 15–20 g / ½–¾ oz Parmesan
- ½ small garlic clove
- Juice of ½ lemon
- 40 ml / 2½ tbsp olive oil
- 20–30 ml / 1–2 tbsp water, if needed
- Salt and pepper
Method
- Peel and halve the figs. Arrange them cut-side down on a large plate lined with plastic wrap. Gently flatten with the bottom of a glass, overlapping them to form one layer.
- Place the burrata in the centre. Lift the plastic wrap to fold the figs around it, shaping into a ball. Carefully unwrap and transfer to a serving plate.
- Blend basil, cashews, Parmesan, garlic, lemon juice and olive oil until smooth. Add a little water to reach a drizzling consistency. Season to taste.
- Drizzle the pesto around the fig-wrapped burrata, sprinkle with crushed pistachios and finish with olive oil.
- Slice open and enjoy with fresh bread!
Tip: Use ripe but firm figs so they flatten easily without becoming too mushy.
