Ingredients
For the roasted vegetables
- ½ cauliflower, cut into florets
- 2 potatoes, diced
- 2 carrots, diced
- 2 onions, diced
- 1 bell pepper, chopped
- Drained chickpeas, optional
- 40–45 ml / approximately 3 tbsp olive oil
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp turmeric, optional
- ½ tsp garlic powder
- ½ tsp salt
- Black pepper
For the yogurt dip
- 200 g / approximately ¾ cup Greek or plain yogurt
- 1 tbsp tahini
- 1 tsp sriracha—or more if you like it spicy
- Juice of ½ lemon
- ½ tsp garlic powder
- Salt and pepper
To serve
- Fresh parsley, chopped
Method
- Arrange the vegetables in a large baking dish or on a baking tray. If adding chickpeas, drain and dry them well first.
- Mix the olive oil with the paprika, cumin, turmeric, garlic powder, salt and pepper. Pour it over the vegetables and toss until everything is evenly coated.
- Roast at 190°C fan / 375°F convection for 30–40 minutes, stirring halfway, until the potatoes and carrots are tender and the vegetables are golden around the edges.
- Mix all the yogurt dip ingredients directly on a serving plate. Spoon the warm roasted vegetables over the yogurt and finish with chopped parsley.
Tip: Cut the potatoes and carrots slightly smaller than the softer vegetables, and avoid overcrowding the tray so everything roasts rather than steams.
