Oven Bakes

Camembert-Stuffed Chicken & Potato Bake 🧀

With the weather getting chillier, I’ve been craving something warm, cheesy and comforting, and this was exactly what I needed! Golden potatoes, juicy chicken, sautéed mushrooms and onions, all baked around a whole Camembert. And the best part? Flip it over, cut into that melted cheese and start dipping!

Camembert-Stuffed Chicken & Potato Bake 🧀

Ingredients

  • 300 g / 10.6 oz chicken breast, diced
  • 4 medium potatoes, diced
  • 200 g / 7 oz mushrooms, chopped
  • 1 onion, sliced
  • 1 whole Camembert (approximately 250 g / 8.8 oz)
  • 2 eggs
  • 50–60 ml / ¼ cup milk
  • ½ tsp salt, or to taste
  • Black pepper
  • Fresh parsley, chopped
  • Olive oil, for cooking

Method

  1. Heat a little olive oil in a pan over medium heat. Add the mushrooms and sauté until they’ve released their moisture and turned golden. Transfer to a large mixing bowl.
  2. In the same pan, add a little more oil and cook the diced potatoes until golden and tender. Transfer to the bowl.
  3. Sauté the sliced onion until soft and lightly caramelized, then add to the bowl.
  4. Finally, cook the diced chicken until golden and cooked through. Add it to the other ingredients.
  5. In a separate bowl, whisk together the eggs, milk, salt and pepper. Pour over the chicken and vegetables, add the chopped parsley and mix everything well.
  6. Place the whole Camembert in the centre of the same oven-safe, non-stick pan, or use a round baking dish lined with parchment paper.
  7. Spoon the chicken and potato mixture around the cheese, spreading it evenly.
  8. Bake at 180°C / 355°F for approximately 10–15 minutes, until the egg mixture is completely set and the Camembert is soft and melted.
  9. Remove from the oven and carefully flip onto a serving plate to reveal the Camembert in the middle.
  10. Cut into the cheese and dip the golden chicken, potatoes and vegetables straight into that creamy, melted centre!

Tip: Make sure the potatoes and chicken are fully cooked before adding the egg mixture, as the oven time is just to set everything together and melt the cheese.
